EATINGS: Healthy Zucchini Cocoa Bread

Today I bring one of my fave morning craves, my zucchini cocoa bread! I usually like to eat it with berries and some agave syrup or simple with some delicious figs… Hope you love it too, its an amazing breakfast or snack!

Ingredients:

2 Eggs (or any substitute, 1 banana, flax “eggs” or apple sauce)

1 cup oat milk

2 cups oat flour

1/2 cup cocoa powder

1 teaspoon backing powder

200g zucchini

2 tablespoons almond butter (or peanut butter)

Sesame seeds

Directions:

  1. Grate the zucchini.
  2. In a large bowl, mix the zucchini, eggs, almond butter and the oat milk.
  3. Add the remaining ingredients, oat flour, cocoa and backing powder. Stir well.
  4. Place into a baking dish, add some sesame seeds at the top and cook for about forty-five to fifty minutes, until you fork it down let it cool for about 10 minutes.

Hoje trago-vos um dos meus pequenos-almoços favoritos, o meu pão de curgete e cacau! Normalmente gosto de o acompanhar com frutos vermelhos e agave ou simplesmente com figos… Espero que também adorem, é um ótimo pequeno-almoço ou snack!

Ingredientes:

2 ovos (ou qualquer substituto, 1 banana, sementes de linhaça trituradas, ou puré de maçã)

1 copo de bebida de aveia

2 copos de farinha de aveia

1/2 copo de cacau

1 c. chá de fermento

200g de curgete

2 c. sopa de manteiga de amêndoa (ou de amendoim)

Sementes de sésamo

Direções:

  1. Ralar o curgete.
  2. Num recipiente, misturar o curgete, os ovos, a manteiga de amêndoa e a bebida de aveia.
  3. Adicionar o resto dos ingredientes, farinha de aveia, o cacau, e o fermento. Mexer bem.
  4. Colocar a massa numa forma, adicionar as sementes de sésamo e levar levar ao forno por quarenta e cinco a cinquenta minutos, antes de o cortarem, deixem que arrefeça por 10 minutos.
